DESSERT WITH TAPIOCA, GOJI BERRIES AND PERSIMMON

Ingredients for the cream:

  • 100 g tapioca
  • 500 ml coconut milk
  • 10 g cranberries
  • 1 persimmon
  • 3 tbsp. goji berries
  • 1 banana
  • 50 g cashew

Ingredients for the cake dough:

  • 100 g coconut flour
  • 1 tbsp. coconut butter
  • 2 tbsp. agave syrup
  • 4 tbsp. soy milk
  • a pinch of Himalayan salt – as needed

Directions:

Mix all ingredients for the cake dough, then put it into a dough shape. Boil the tapioca in the coconut oil. By the end, add the agave syrup, cranberries, cashew and goji berries. Let it cool and then add it over the cake dough. Decorate over the top with banana slices, persimmon, cranberries and kiwi pieces, or after own tastes.
