BEETROOT SALAD WITH HORSERADISH AND CASHEW

Ingredients:

  • 3-4 pieces of baked beetroot
  • 50 g cashew
  • 1 inch grated horseradish
  • Lemon juice – as needed
  • 2-3 tbsp. soy milk
  • 1 tbsp. vegan mayonnaise

Directions

Cut in small squares the beetroot. Add in the hand blender the cashew, horseradish, salt, soy milk, and mayonnaise and lemon juice and mix all together. The resulted sauce is poured over the beetroot and mix, then serve fresh.
